Milk under the P.F.A. Act and its rules is the normal
mammary secretion derived from complete milking of healthy animals without either
addition thereto or extraction there from. It shall be free from colostrum.
All milks and
milk products have to conform to two important parameters (i) milk fat and (ii)
milk solids non-fat (SNF). This is done by finding gravimetrically the total solids
in the test product by drying the correctly weighed test material in a drying oven
at 105 0C
to a constant weight till the difference between two successive weighings is not
more than 1 mg.
Total solids
determination is a common procedure in many manufacturing plants using dairy
products, such as ice cream factories, condensaries and dry-milk plants, to analyse
milk and the finished products for dry matter or “total solids.” The “Mojonnier
tester” is used frequently for this purpose in these factories. This method is virtually
the same as the offical method of AOAC. The chief difference lies in the
special provisions available in the Mojonnier tester for rapid heating and
subsequent cooling of the sample.
Procedure : Accurately weighed few gm. Of the product to be analysed is taken into a flat bottomed dish and subjected to heat untill all moisture has been off on a water bath. The dry residue is weighed, its percentage calculated as total dry solids.
